Taking good photographs of knives offers more challenges than most would assume. Knives usually have shiny areas coupled with dark areas. You can wind up with fall outs and big hot spots.
What works best is a source of diffused light and diffused fill light.
These images were shot with a constant lighting kit, using incandescent bulbs. The key light was placed 45 degrees to the knife with the fill located 90 degrees to camera left.
When shooting, you will want to move the knife to get the shine you want or to remove that shine. Reflections from the surface the knife is on can be a creative enhancement or if not desired, a non-reflective surface can be placed under the knife.
The best thing to do is practice.
